- 800 ml (about 3–3.5 cups) hot water or broth
- Fresh parsley, for garnish (optional)
- Pickles or green peppers, for serving
Instructions
1. Render the Bacon:
Heat a heavy-bottomed pot or deep skillet over medium heat. Add the diced bacon
or pork belly and slowly render out the fat until the pieces start to crisp.
(Add a tablespoon of lard or oil if using leaner meat.)
2. Sauté the Aromatics:
Add the chopped onion to the fat and cook until translucent and soft. Stir in
the garlic and sauté for another minute.
3. Brown the Sausage:
Add the sliced kolbász sausage and let it release its paprika-rich oil and
aroma. Stir until lightly golden.
4. Toast the Tarhonya:
Stir in the tarhonya (egg barley) and gently toast for 2–3 minutes, stirring so
it toasts on all sides. It should take on a light golden hue—this step is
crucial for depth of flavor.
5. Add Vegetables and Paprika:
Add the diced potatoes, bell pepper, and tomato (or tomato paste) to the pot.
Mix well. Remove from the heat and sprinkle the sweet paprika over the mixture

6. Add Liquid and Simmer:
Pour in just enough hot water or broth to cover everything. Season with salt
and pepper. Return to heat, bring to a gentle boil, then reduce to low, cover,
and simmer for 20–25 minutes, stirring occasionally. Add more liquid a bit at a
time if the mixture looks too dry—the tarhonya will absorb quite a lot as it
cooks.
7. Final Touches:
The dish is ready when the pasta and potatoes are tender and most of the liquid
has been absorbed. Taste and adjust seasoning. Let it stand covered for 10
minutes off the heat before serving to allow flavors to settle.
8. Serve:
Spoon into bowls and sprinkle with chopped parsley if desired. Serve with
pickled cucumbers, peppers, or simple green salad. A dollop of sour cream on
top is a modern addition and delicious, though not strictly traditional.
